Celebrate with these quick and easy gluten-free dishes

fusilli pasta_pesto_tomatoes_07_08_12Well, the diamond jubilee has been and gone in a flurry of bunting and cake (we like cake), Wimbledon’s over and the Olympics is in full swing. There really is so much to celebrate – especially when the sun comes out.

But if you or your children need to eat gluten free, the parties and playdates can take a little more planning. So we thought it was the perfect opportunity to share a couple of our quick and easy pasta recipes with you – less than fifteen minutes to whip up some posh nosh for your next barbecue, birthday party, or street bash.

Recipe One

Grab 300g Dell‘Ugo chickpea fusilli and pop it in some boiling salted water… it will be ready in 4-5 minutes. Once drained, stir through some green pesto and cream cheese, top with peppery rocket, halved cherry tomatoes, shavings of parmesan and some pine nuts. Delicious hot or cold, serves 6.

Recipe Two

Boil 300g Dell‘Ugo chickpea fusilli as above then place in a baking tray with 200g chopped tomatoes, 250ml passata, some fresh or dried mixed herbs, 250g of grated cheddar, some asparagus, sweetcorn, chopped onions and 2 cooked chopped chicken breasts. Stir it all together and top with another sprinkling of cheese. Pop it in the oven for 12 minutes and serve it piping hot to a hungry mob, or cold as a main course or salad for a party buffet. Serves 6 as a main course.
